Old Dog Jing Tonic Cookies

Ingredients:
3 cups whole rolled oats
2 cups boiling water (or cranberry juice)
½ cup flour (rice, whole wheat or unbleached white)
½ cup chopped almonds or walnuts
1 tbsp oil (sesame, vegetable or olive)- Optional
½ tsp sea salt- Optional
1tsp cinnamon
1 tsp Six Gentlemen extract granules (Liu Jun Zi Tang)
1 tsp vanilla (or almond) extract
½ cup pre soaked, rinsed Lycium Berries (Gou qi zi)
Several tbsp raw, local honey

Extra Notes From Dr Schellà
Can use Amaranth Flour instead of regular flour.
Try warming the rolled oats prior.
Using cranberry juice is better than water. Try to use organic as it is more bitter and has more flavor.
Use walnuts over almonds as it helps with cognitive dysfunction.
You do not need to soak the Lycium berries. You can instead use Blood & Yin Tonic which is also an antioxidant.
Try using Chinese Red Dates (JuJube aka Ziziphus Jujuba) and regular dried dated (Phoenix dactylifera) for they can be added to give extra Blood and Qi Tonification

Procedure:
Preheat oven to 350°F. Dry-toast oats in oven until golden brown (about 10-15 minutes). Pour into a mixing bowl. Scald with boiling water (or juice) and let stand for 5-10 minutes.
Mix all remaining ingredients together and drizzle honey over mixture until it holds together enough to form cookies. Place tablespoon sized cookies on a preheated, greased cookie sheet. Bake for 12-20 minutes. If you want crunchier cookies, turn oven off and allow cookies to dry in oven until it is cool.
